In my world, summer means sun, sand, water, seafood and BBQ. You don t do justice to summertime if you re not in the water (be it swimming pool or the ocean), eating some seafood or BBQ, and have a drink or two. Summer is the best time to enjoy the bounty of the sea, such as clams .

This garlic butter sauteed clams are inspired by my recent travel to Italy. Every restaurant I went to, there is a section of the menu dedicated to seafood, and sauteed clam is always on top of the list. As the name suggests, the clams are cooked with a combination of garlic, butter, olive oil, parsley, with lemon juice. It s really simple but absolutely delicious.

In the seafood shacks or restaurants in Southern California, you can find similar dishes. It s my summer ritual to go to the beach, enjoy some of the fresh seafood and shellfish at these restaurants by the sea. A simple dish like this never fails to make me happy. Bon appetit!

Am I glad I found your site. I spent a lot of time in Malaysia (KL, and Penang which is food heaven imo).

My hosts were Chinese who took me to the best, BEST, hawker food places that they knew. I went to a hawker park (what I call it) one night in KL where the perimeter of the place was rung with all the hawker chefs cooking their specialities. Big plastic round tables in the middle were for families, customers. All you heard was slurping. and kids laughing, and spatulas clicking. 😉

My host asked if I liked oysters. Said love ‘em. He and I had similar food fanaticisms, we discovered. About five guys were cooking oysters around the perimeter. My host said No, Only one. And took me to an old skinny short guy working over a *huge* wok who double-spatula’d and womped up a sauced and savory oyster dish that to this day I cannot get out of my mind. God. That sauce.

The way you guys cook gailan I can’t find stateside. What is the secret?

Most everyone loves to travel. It’s exciting to see new places and experience the different customs, entertainment and foods of other cultures. Many people may not get the chance to travel because of time constraints or other obligations, but they are still able to sample other cultures through food.

Imagine a trip to an ancient country, shrouded in mystery, a country that most Americans don’t know too much about today. It is a country of lush mountain highlands and arid lowlands with a rich cultural and religious history that maintains many of its customs to this day.

The country is Ethiopia, the birthplace of coffee, home to some of the best Olympic runners in the world and the place believed by many to be the final resting place of the Ark of the Covenant.

Observing the Julian calendar, Ethiopia boasts 13 months of sunshine. The rainy season may come, but the sun still shines in an unmistakable sense of hospitality and sharing from its people.

Ethiopian food is uncomplicated and healthy, but no single adjective can adequately describe how absolutely delicious it is. Most dishes begin with a bread, as in many cultures, but not in loaf form. Injera is the staple of the Ethiopian diet. It is a light, slightly spongy, pancake-like bread that is placed first on the plate to hold whatever comes after.

Imagine the scent of any exotic spice you have ever experienced. Now imagine dozens of them, filling the air and mixing together in perfect harmony. You may pick out a stray scent of cumin, garlic, onion, curry, ginger or peppers, but you may never be able to place them all.

The dish may be chicken or lamb or beef or lentils, split peas or other vegetables, simmered into a savory stew served over fresh injera. More fresh injera is customarily served on the side, cut into small rolls. The injera is torn off in small pieces and used to grab bite sized portions of the food, no utensils needed.

There is very little fat involved in cooking, meats are thoroughly trimmed and cleaned and the ingredients are all fresh and natural, making Ethiopian food some of the most healthful in the world. Dried spice combinations unique to Ethiopian cooking lend a rich, piquant taste to many dishes. All in all, it is food that is exotic, healthy and extremely satisfying. Topped off with a cup of strong, hot Ethiopian coffee, it is a wonderful way to feed the body and experience something of another world at the same time. Fasika, feast.

History Of Mexico’s Most Famous Culinary Preparation :

Most people associate mole with either with Puebla or Oaxaca. but the origin of mole poblano, the thick, rich, chocolate-tinged sauce made so famous in the colonial mountain city of Puebla, Mexico, is still disputed, and generally involves these two versions of the legend:

The first says that 16 th Century nuns from the Convent of Santa Rosa in Puebla de los Angeles, upon learning that the Archbishop was coming for a visit, went into a panic because they had nothing to serve him. The nuns started praying desperately and an angel came to inspire them. They began chopping and grinding and roasting, mixing different types of chiles together with spices, day-old bread, nuts, a little chocolate and approximately 20 other ingredients.

Mole Poblano: Pollo con Arroz

This concoction boiled for hours and was reduced to the thick, sweet, rich and fragrant mole sauce we know today. To serve in the mole, they killed the only meat they had, an old turkey, and the strange sauce was poured over it. The archbishop was more than happy with his banquet and the nuns saved face. Little did they know they were creating the Mexican National dish for holidays and feasts, and that today, millions of people worldwide have at least heard of mole poblano.

The other legend states that mole came from pre-hispanic times and that Aztec king, Moctezuma, thinking the conquistadors were gods, served mole to Cortez at a banquet to receive them. This story probably gained credibility because the word mole comes from the Nahuatl word milli which means sauce or concoction . Another connection could be that chocolate was widely used in pre-columbian mexico, so people jumped to that conclusion.

Diana Kennedy, the famous cookbook author and television chef, adds a third, less plausible version in her book The Cuisines of Mexico. [Harper Row:New York] 1972, (p.199-200), This time it was Fray Pascual who was preparing the banquet at the convent where he (the archbishop) was going to eat. Turkeys were cooking in cazuelas on the fire; as Fray Pascual, scolding his assistants for their untidiness, gathered up al the spices they had been using, and putting them together on a tray, a sudden gust of wind swept across the kitchen and they spilled over the cazuelas. Thus mixing together such an unheard-of combination of ingredients.

What do the real experts say? The idea of using chocolate as a flavoring in cooked food would have been horrifying to the Aztecs just as Christians could not conceive of using communion wine to make, say, coq au vin. In all the pages of Sahagun that deal with Aztec cuisine and with chocolate, there is not a hint that it ever entered into an Aztec dish. Yet, today many food writers and gourmets consider one particular dish, the famous pavo in mole poblano, which contains chocolate, to represent the pinnacle of the Mexican cooking tradition. the place of origin of the dish and its sauce, the Colonial Puebla de los Angeles; this beautiful city, unlike others in central Mexico, has no Aztec foundations and neither does the dish, regardless of what food writers may say. Taken from The True History of Chocolate, Sophie D. Coe and Michael D. Coe [Thames and Hudson: London] 1996 (p. 216-7).

There is no greater expert on pre-hispanic Mesoamerica than Michael Coe and this detective is convinced. Case closed (for now) on the mystery of the origins of mole poblano.

No story about mole poblano would be complete without talking a little bit about the other moles. There is a lot of misinformation about mole out there, in general. Most culinary experts agree, there are 6 moles and as Susana Trilling describes in her book, My Search for the Seventh Mole: A story with Recipes from Oaxaca, Mexico, [self-published, 1997], she is looking for that elusive seventh mole. Does she find it? You ll have to read the book to find out, and the recipes are fantastic, so you can try your own mole at home, if you dare.

Enchiladas con Mole

All moles are very time consuming, labor intensive and require many ingredients. Some sources state that some moles have as many as 100 ingredients, but that s an exaggeration. But 30 ingredients is not unheard of, and some mole recipes contain 10 different varieties of chiles alone. Other ingredients include: peanuts, almonds, fried bread, plantains, lard, sugar, bittersweet chocolate, cinnamon, cloves and many more. For those willing to give it a try, here is a less elaborate recipe for Mole Poblano with chicken .

Each Mexican woman has her own mole recipe, probably passed down from her mother. Because mole takes so much time to prepare, it is usually made in huge batches, too large for the home blender to handle. Therefore, women take their mole ingredients, all cooked and ready to blend, to large molinos or grinders in their neighborhood. The mole is passed through the grinders and comes out smoother than you could get from your home blender. It is not unusual to see women walking home from the molinos with buckets of mole for a fiesta.

And be sure to have plenty of napkins nearby when eating any mole. As you dip your warm, homemade tortilla into the wonderful sauce, you are bound to take some home with you on your shirt, your arms and under your fingernails. Now you know you re enjoying mole!

Although beautiful, a lot of thought was not given to audio and video integration as cat 5 was not incorporated and the thought of looking at ugly video boxes and cables all over the place was not appealing. I decided to talk with Ultra-Tech based on reviews of the company. I called and spoke to Jon Zietz who met me as I was here only for a couple of days. This resulted in a subsequent meeting in their showroom where he explained his vision for getting the job done and equipment needed.The plan was to install (2) 65” 4k Curved sets, (2) 51 “ and (1) 32” Samsung TV’s all wall mounted and a wireless dvd player. Joe and his team was involved in the install and the coordination with corporate and Jon did an excellent job with equipment software integration and remote control programming.The job was challenging and the team met and exceeded the task. From day one I felt the I was a valued customer and that they were going to do whatever it took to make me happy. The team did an A+ job. Sure we had a few hicups but no obstacles were going to stop this team. With Recipe Box, not only can you sort your favorite recipes by dish, cuisine, meal type, menu, chef and more categories, but you also can create shopping lists based on any or all of your preferred recipes and access them from both Food Network s website and your mobile phone.

The first step to creating your Recipe Box is registering to become a member of It s free and easy to sign up, and the process — consisting of an email and password entry — takes mere moments; you can also register with your social media accounts, like Facebook or Google+. If you re an existing member and you ve already started collecting recipes in your Recipe Box, those saved recipes will have been moved to the new Recipe Box.

Once you ve created a profile and are signed in, simply click the Save to Recipe Box link on the side of any recipe. You can create customizable folders for themed recipes, like Thanksgiving-inspired eats, or just pool them in All My Recipes.

To make the process of actually planning to cook these recipes simpler, you can add ingredients to your Shopping List, and from there tweak the list so that it doesn t include ingredients you already have. You can also add miscellaneous goods — say, those needed for no recipe in particular — then email yourself the complete list to easily reference later.

By hovering over any recipe in your recipe box, you have the option of putting its ingredients on your shopping list, adding the recipe to a folder, plus sharing, deleting or viewing the recipe.

If you come across a must-save recipe on a site other than, you can add it to your recipe box as well. After clicking on Add a Recipe from a Site, just copy and paste the URL into the field and select Import Page. You ll be able to make notes about the recipe and save it to any of your folders.

Kimchi: South Korea’s efforts to boost its national dish

Korea’s sour and spicy national dish, kimchi, has begun popping up in supermarkets and on restaurant menus in Europe and the US. Even America’s First Lady Michelle Obama has shared her recipe. And the government is hoping it will spearhead a drive to promote Korean food overseas.

Standing in her well-equipped kimchi laboratory, her coral lipstick bright against her white lab coat, Kim Soon-ja directs a team of research assistants in their latest project. Giant flasks of pink and yellow kimchi stock tower over the work-table, as they test salt levels in a petri-dish of spicy gloop.

Mrs Kim is South Korea’s kimchi Grand Master, and a secret weapon in expanding the appeal of the country’s national dish.

“I started to experiment with kimchi recipes when I was a child,” she said. “I couldn’t imagine my life without it.”

Few Koreans could. Kimchi, traditionally made with cabbage, is seen as synonymous with national culture, credited with fighting off infections, the respiratory illness SARS and even cancer.

The annual Korean ritual of making it has recently been listed as by the UN cultural organisation Unesco as an Intangible Cultural Heritage. Quite a lot for a humble dish of fermented vegetables.

“Kimchi is symbolic of Korea,” said Dr Park Chae-lin of the World Kimchi Institute in Gwangju. “One can see it on every meal table throughout the day.”

“And because [Koreans have] been exposed to it from such a young age, there’s a feeling of nostalgia for it when they get older: the flavour of their mother’s kimchi. It’s part of the identity of Koreans.”

So why is Mrs Kim tinkering around with a national icon?

The answer lies many thousands of miles away – in the factories of China and the restaurants of the West.

Kimchi has already started to appear on upscale London menus. New pop-up snack stalls are offering kimchi-topped burgers or Korean-flavoured tacos to the city’s cosmopolitan lunchtime crowd.

This new visibility is partly the result of South Korea’s growing cultural prominence, and partly the fruit of a long-running government campaign to promote Korean food overseas.

“Ever since Korea hosted the Olympics in 1988,” says Dr Park, “there was a strong drive to introduce kimchi to the world, as a food that represented Korea.”

“But there was also a hesitation back then; a lack of confidence about whether people would really like it, or would be put off by the garlic smell.”

Kimchi is traditionally made by adding a paste of chilli, garlic and fish sauce to salted cabbage, and allowing it to ferment – sometimes for several months, or even years. It has a distinctive sharp-sour smell and a robust, spicy flavour, which varies between each batch, and each family recipe.

Korea may be more confident now, but the old recipes, says Mrs Kim, are still considered too spicy and too “aromatic” for modern global tastes.

“Foreigners don’t like it too spicy. Even Korean children don’t like it too strong these days.”

“These pink and yellow liquids are my new patented kimchi mixtures,” she said. “They’re less spicy, less salty and they have no smell at all.”

This year, the government is due to invest almost $9m (£5.5m) in R D into Korean traditional foods, with kimchi at the forefront of that campaign.

There is another $34 million (£21m) available for improving manufacturing facilities. But then there are strong reasons, aside from cultural diplomacy, why the government might be keen to promote its national icon overseas.

China competition

For all South Korea’s pride in kimchi, its trade statistics reveal a different story: that South Korea is a net importer of its national dish.

In 2012, the country imported almost eight times the amount of kimchi it exported, with most of those imports coming from China.

Kimchi produced there is cheaper, but few Koreans know they’re eating it, because Chinese-made kimchi doesn’t appear on supermarket shelves here: sales staff say that customers would not buy it.

Instead, it ends up in the catering industry, where it’s hidden from view.

Worried by China’s growing role as a kimchi producer, the South Korean government is planning to tighten rules on restaurants this year, insisting they list the origin of their ingredients prominently for customers to see.

“We need to raise awareness of the true value of Korean national kimchi” said Lee Yong-jik, deputy director at the Ministry of Agriculture’s kimchi department.

Many Koreans, like him, insist that national geography is crucial to kimchi’s alleged anti-bacterial properties.

“The ingredients are really important,” Mrs Kim explained in her kimchi lab, “not to mention the water, the temperature and also the humidity.”

“It’s Korea where those elements exist, so the kimchi made in Korea is full of very healthy enzymes. In China, the ingredients are different, and the environment is different as well, so you don’t get the same enzymes. Korean kimchi and Chinese kimchi are two totally different things.”

Perhaps the ultimate irony in all this is that, as government investment and global interest in their national dish grows, Koreans themselves are eating less of it.

“Domestic consumption has dropped dramatically,” says Dr Park of the World Kimchi Institute.

“People rarely have all three meals at home these days, they’re trying to eat less salty foods, and there’s more choice available. Western foods are becoming much more common, even at home, and people don’t tend to eat kimchi with spaghetti.”

The government has noticed the trend too – and wants to reverse it.

“We’re trying to educate people,” said Mr Lee of the Agriculture Ministry. “To get them accustomed to Korean food, starting from childhood; hold training courses, and make it fun for families.”

With increasing competition from overseas producers, and declining consumption at home, kimchi, as one prominent politician put it, “is going through an ordeal as harsh as a Korean winter”.

But its place on Western menus also offers South Korea the chance to reinvent its iconic, home-spun dish. Mrs Kim’s formula for foreigners may end up working quite well at home.

Onion Strings

Onion Strings are buttermilk soaked and lightly seasoned fried onions. Perfect for topping burgers, a snack or green bean casserole.

Onion strings are also known as French fried onions or onion straws. They are very thinly sliced sweet onion bathed in buttermilk to remove the sting and then tossed in a seasoned flour mix and flash fried. If you are an onion ring lover, then you are also an onion string lover.

Onion strings are hugely verstile. While I like to just munch on mine like a snack, hubby loves his on a Cowboy Burger. You can also put them on Hot Dogs, toss onion strings into a salad. use them on a green bean casserole or even serve them as a side dish for breakfast. lunch or dinner. Even use them as an accent on top of deviled eggs. in stuffing or on top of any dish that needs a little pizzazz.

The hands-on time to make onion strings is fairly minimal, although there is about an hour of passive time to let them soak up all the delicious buttermilk goodness. You can even make them ahead of time and store them in an airtight container at room temperture. While I don t suggest microwaving them, reheating is super easy in the oven. Just heat on 350 degrees for 5 minutes or low broil for 2-3 minutes. How will you eat your onion strings ?

Starting thinly, thinly (did I say thin?) cutting your onion into rings. Remember, these are onion strings, not onion rings, so they need to be super thin. Make sure you are using a sharp knife or a mandolin slicer. Separate onion rings and place into a shallow dish.

Cover onions with buttermilk, tossing until all covered. Set aside at room temperture, tossing every 10-15 minutes to ensure they are all marinating evenly.

In a medium mixing bowl, combine flour, salt, ground black pepper and celery salt.

Fill a large, heavy bottom pan with 2 inches of vegetable oil. Heat to 375 degrees.

Working in batches, use a slotted spoon or your fingers to remove onions from buttermilk, tapping to remove any excess liquid. Drop into flour mixture, turn to coat and then carefully place in hot oil.

Fry for 3-4 minutes, or until lightly brown. Remove to a paper towel lined baking sheet or plate to drain.

Continue with remaining onions.
